Steamed Fish in Black Bean Sauce

500g fish steaks (black cod/sablefish), 1Tbsp soy sauce, 1Tbsp Chinese cooking wine, 1.5tsp sugar, 0.5tsp ground white pepper, 1Tbsp + 1 tsp Chinese black beans, 2Tbsp garlic, 2Tbsp ginger, 1stalk green onion, 1ea red pepper
Instructions
1. Prepare the marinade for the fish. In a heatproof plate with some depth, add soy sauce, Chinese cooking wine, sugar, and ground white pepper. Whisk to dissolve most of the sugar.
2. Place the fish steaks in the marinade, flipping them to coat both sides. Marinate in the fridge for 15 minutes on each side.
3. Rinse the Chinese black beans to remove excess salt. Chop the rinsed black beans with minced garlic and ginger until well mixed.
4. Spread the black bean, garlic, and ginger mixture evenly over the marinated fish steaks, pressing it onto the fish.
5. Add extra ginger slices to the sauce around the fish for added flavor.
6. Crumple a piece of parchment paper and then flatten it out to cover the fish. This prevents condensation from the steamer lid from dripping onto the fish.
7. Place the covered fish plate into a preheated steamer. Steam for about 15 minutes for thick steaks, or 12 minutes for thinner pieces, until the internal temperature reaches 145°F (63°C).
8. Remove the parchment paper. Taste the sauce and adjust seasoning if needed by adding a touch more soy sauce or sugar.
9. Garnish the steamed fish with sliced green onions and red pepper (optional). Close the lid and let the green onions steam in the residual heat for 30 seconds.
10. Serve the steamed fish immediately with rice. Be careful of pin bones if using bone-in fish.
