200g sour tapioca starch, 200g sweet tapioca starch, 5g salt, 200ml milk, 50ml vegetable oil, 1ea egg, 100g sharp aged cheddar, 50g Parmesan
Instructions
1. Mix the dry ingredients: sour tapioca starch, sweet tapioca starch, and salt.
2. In a separate pot, mix the wet ingredients: milk and vegetable oil. Stir a little and heat until it bubbles, then turn off the heat.
3. Pour the hot wet mixture into the dry ingredients and mix gently until there's no more dry starch and it's all combined.
4. Add the egg to the dough and mix until well combined. This helps with moisture and makes it fluffy.
5. Knead the dough with your hands until it's not sticking to your hands and is a light yellow, homogeneous color.
6. Add the shredded cheddar and Parmesan cheeses to the dough and mix them in.
7. Lightly oil your hands and roll the dough into smooth balls.
8. Bake at 400°F (200°C) for about 20 to 25 minutes, or until they have a light golden crust.
9. Serve hot for the best taste and texture.
