Spicy Pork Slivers with Fermented Chili

50g Zao la jiao (fermented chili), 1half inch Ginger, 2cloves Garlic, 200g Lean pork, 0.25teaspoon Salt, 0.5teaspoon Sugar, 0.5teaspoon Cornstarch, 1teaspoon Liaojiu (Shaoxing wine), 0.25teaspoon Dark soy sauce, 0.5tablespoon Oil, 0.25cup Oil, 2stalks Green garlic (white part), 2ea Dried chilis, 1tablespoon Baijiu or Shaoxing wine, 0.5tablespoon Soy sauce, 0.25teaspoon MSG, 0.25teaspoon Dark Chinese vinegar, 0.1teaspoon White pepper, 2stalks Green garlic (green part)
Instructions
1. Finely mince the zaolajiao. If using Lao Gan Ma's, try to get more paste and less liquid to avoid popping.
2. Finely mince a half inch of ginger and two cloves of garlic.
3. Cut 200 grams of lean pork into slivers.
4. Marinate the pork slivers with 0.25 teaspoon salt, 0.5 teaspoon sugar, 0.5 teaspoon cornstarch, 1 teaspoon Shaoxing wine, and 0.25 teaspoon dark soy sauce. Mix well, then coat with about 0.5 tablespoon of oil.
5. Heat a wok until piping hot, turn off the heat, add about 0.25 cup of oil, and swirl to create a non-stick surface.
6. Turn heat to maximum, add the pork slivers, break them up with chopsticks, and stir-fry for about 1 minute or until the pork changes color. Remove the pork from the wok.
7. Remove 1-2 tablespoons of oil from the wok. Over a low flame, add the minced zaolajiao and slowly fry for 1-2 minutes until it stains the oil.
8. Add the minced ginger and garlic to the wok and fry until fragrant, about 30 seconds. Increase heat to high.
9. Add the white part of two stalks of green garlic (smashed) and two dried chilis. Quickly fry.
10. Swirl 1 tablespoon of baijiu or Shaoxing wine over your spatula and around the sides of the wok.
11. Add the fried pork back into the wok. After a quick mix, swirl in 0.5 tablespoon of soy sauce in the same way.
12. Briefly fry, then season with 0.25 teaspoon MSG, 0.25 teaspoon dark Chinese vinegar, and a good sprinkle of white pepper.
13. Add the green part of the green garlic (cut into inch sections) or scallions. Mix for 15 seconds, then remove from heat and serve.
