One Pan Shrimp and Rice

Ingredients
1pound uncooked shrimp, 1.5cup white rice, 1small onion, 0.5cup green pepper, 4ounces mushrooms, 1clove garlic clove, 0.5teaspoon salt, 0.5teaspoon black pepper, 1teaspoon oregano, 2.25cups vegetable broth or chicken broth, 3tablespoons olive oil, 1bunch cilantro
Instructions
1. Chop the onion, green peppers, and mushrooms into very small dice.
2. Add the diced onions, green peppers, and mushrooms to a pan with olive oil and cook until softened.
3. Add minced garlic to the pan and cook for one minute until fragrant.
4. Rinse the jasmine rice and add it on top of the cooked vegetables in the pan.
5. Season the rice and vegetables with half a teaspoon of salt, half a teaspoon of black pepper, and one teaspoon of oregano.
6. Pour 2 1/4 cups of vegetable or chicken broth into the pan and stir everything together to incorporate the broth.
7. Simmer the mixture for 15 minutes to cook the rice.
8. While the rice is cooking, season the uncooked shrimp with salt, pepper, and olive oil. Set aside at room temperature.
9. Once the rice is done cooking, quickly open the pan, add the seasoned shrimp on top, and let it steam for five minutes.
10. Fluff everything together with a fork and garnish with fresh cilantro before serving.
