2slices slices of bread, 1egg egg, 0.25cup milk, 1tsp salt, 0.5tsp black pepper, 3cloves garlic, 0.5cup Pecorino Romano cheese, 0.25cup parsley, 0.25cup basil, 0.5lb ground pork, 1lb ground beef, 0.5cup olive oil, 1can crushed tomatoes, 1ball burrata cheese
Instructions
1. Cut two slices of bread into small cubes. These will be used to make a panade, which is a binder for the meatballs. A panade helps to keep the meatballs tender and juicy.
2. In a bowl, combine the bread cubes, one egg, and a splash of milk. Add salt and pepper to taste. Press three cloves of garlic into the mixture using a garlic press.
3. Grate a generous amount of Pecorino Romano cheese into the bowl. Add chopped parsley and basil. The cheese and herbs will add flavor to the meatballs.
4. Add 0.5 lb of ground pork and 1 lb of ground beef to the mixture. Mix everything together thoroughly with your hands until well combined.
5. Heat a generous layer of olive oil in a pan over medium heat. Form small meatballs with wet hands to prevent sticking. Place the meatballs in the pan as it heats up.
6. Brown the meatballs on a couple of sides. You don't need to brown every side, as deep browning can lead to moisture loss. Once browned, remove the meatballs from the pan and set aside.
7. Pour out most of the oil from the pan, leaving some of the browned bits at the bottom. Add a little water to deglaze the pan, scraping up the browned bits to incorporate their flavor into the sauce.
8. Add a can of crushed tomatoes to the pan. Stir in the deglazed bits. Add a couple of basil sprigs and parsley stems for flavor. Simmer the sauce.
9. Return the browned meatballs to the simmering sauce. Let them simmer for about 5-7 minutes until fully cooked through. This allows the flavors to meld between the meatballs and the sauce.
10. Serve the meatballs in a bowl, topped with grated Pecorino Romano cheese, torn burrata cheese, chopped parsley, and a drizzle of olive oil.
