Sour Cream and Onion Drop Biscuits

2cups Flour, 1tablespoon Baking powder, 1teaspoon Sugar, 1teaspoon Salt, 113g Butter, 0.5cup Grated parmesan, 0.25cup Chives, 1cup Buttermilk
Instructions
1. Combine flour, baking powder, sugar, and salt in a large bowl and whisk together until evenly distributed.
2. Add cold, cubed butter to the dry ingredients. Toss the butter in the mixture, then use your hands to pinch and break down the butter into large flakes. Continue until there are some big and some small pieces of butter.
3. Add grated parmesan to the mixture and mix it in with your hands.
4. Add chopped chives to the mixture and gently fold them in.
5. Pour buttermilk into the mixture. Gently fold with a spatula until all the bits are wet and bound together. If the mixture looks a little dry, you can add a little more buttermilk or water/milk.
6. Using a 1/3 cup measuring cup or your hands, drop portions of the dough onto baking sheets lined with parchment paper. Leave space between each biscuit as they will expand.
7. Bake at 400°F for 23-24 minutes, or until the biscuits are puffy and golden brown on all sides. The smell of sour cream and onion will also indicate they are done.
8. Serve warm. The biscuits will have a crunchy outside and a soft, fluffy inside.
