Instructions
1. In a large bowl, combine 2 boiled and mashed potatoes, 1 finely chopped chilli, 0.5 tsp ginger paste, 2 tbsp chopped coriander, 0.25 tsp crushed pepper, 1 tsp mixed herbs, 0.25 tsp cumin powder, and 0.5 tsp salt. Mix well.
2. Add 2 slices of bread (white/brown, with sides cut) in pieces and mash and mix well to form a soft dough. Add more bread if the dough is sticky.
3. Prepare the batter: In a separate bowl, mix 2 tbsp corn flour, 2 tbsp maida, 0.25 tsp crushed pepper, 0.25 tsp salt, and 0.25 cup water until there are no lumps.
4. Take a small ball-sized portion of the potato dough, flatten it, stuff with a small piece of cheddar cheese, and secure tightly to form a smooth ball.
5. Dip the ball in the corn flour batter, then roll in crushed corn flakes to coat well.
6. Deep fry the bread cheese balls in hot oil, stirring occasionally, until golden brown. Alternatively, preheat oven to 180°C and bake for 30 minutes.
7. Serve the bread cheese balls with ketchup.
8. For paneer bread rolls, combine 1 cup grated paneer, 2 tbsp finely chopped capsicum, 0.5 tsp ginger garlic paste, 0.5 tsp chilli powder, 0.25 tsp cumin powder, 0.25 tsp garam masala, 0.5 tsp aamchur, 2 tbsp tomato sauce, 2 tbsp finely chopped coriander, and 0.25 tsp salt. Combine well to make the paneer stuffing.
9. Take a slice of bread (white/brown), trim the sides, and roll it thin. Spread 0.5 tsp green chutney on the bread.
10. Place 1 tbsp of paneer stuffing on the bread and roll tightly, securing it well.
11. Roast the bread paneer rolls in a pan with butter on all sides until golden and crisp. Add more butter if required.
12. Serve the bread paneer rolls.
13. For bread masala, cut 5 slices of bread (white/brown) into pieces.
14. In a pan, melt 2 tsp butter. Add 2 finely chopped garlic cloves, 1 slit chilli, and 2 tbsp chopped spring onion. Sauté well.
15. Add 0.5 finely chopped onion, 0.5 finely chopped carrot, 2 tbsp finely chopped cabbage, 2 tbsp finely chopped capsicum, and 0.25 tsp salt. Stir fry until the vegetables are soft but not overcooked.
16. Add 2 finely chopped tomatoes, 1 tsp pav bhaji masala, and 0.25 tsp salt. Sauté well until soft and mushy.
17. Add 2 tbsp tomato sauce and sauté well until it combines.
18. Add the bread pieces and mix gently until the masala coats well. Garnish with 2 tbsp finely chopped coriander.
19. Serve the bread masala.
20. For bread manchurian, blend 3 slices of bread (white/brown) into breadcrumbs.
21. In a bowl, combine the breadcrumbs, 1 cup finely chopped cabbage, 0.5 cup grated carrot, 0.5 tsp chilli powder, 0.5 tsp ginger garlic paste, 0.25 cup corn flour, 0.25 tsp salt, and 2 tbsp water. Mix well and squeeze the cabbage to form a dough.
22. Form small ball-sized portions from the dough, greasing your hands if needed.
23. Deep fry the manchurian balls in hot oil on medium flame, stirring occasionally, until golden and crisp. Alternatively, preheat oven to 180°C and bake for 30 minutes.
24. For the manchurian sauce, heat 3 tsp oil in a pan. Add 3 finely chopped garlic cloves, 1 slit chilli, 2 tbsp chopped spring onion, 2 tbsp chopped onion, and 0.25 sliced capsicum. Sauté well, do not overcook.
25. Add 2 tbsp tomato sauce, 1 tsp chilli sauce, 1 tbsp vinegar, 1 tbsp soy sauce, 0.25 tsp crushed pepper, and 0.25 tsp salt. Mix on high flame until the sauce thickens and turns glossy.
26. In a small bowl, mix 1 tsp corn flour with 0.25 cup water to make a slurry. Add the corn flour slurry to the sauce and mix well until it thickens and turns glossy.
27. Add the fried manchurian balls and 2 tbsp chopped spring onion. Mix and coat well.
28. Serve the bread manchurian garnished with 1 tbsp chopped spring onion.
