Instant Pot Vegan Lentil Chili

2tablespoons olive oil, 1ea medium onion, 4ea garlic cloves, 0.5cup red lentils, 1.5cup green lentils, 3cans (15-ounce) tomato sauce, 15ounces vegetable broth, 1can diced tomatoes with green chilies, 1can (15-ounce) red kidney beans, 2tablespoons chili powder, 2teaspoons Mexican oregano, 1teaspoon cumin, 1teaspoon salt, 2tablespoons maple syrup
Instructions
1. Open the Instant Pot, add olive oil, and then add one medium chopped onion. Cook for about a minute until fragrant. (Optional but recommended for flavor depth).
2. Add four cloves of garlic and saute for an extra minute until you can smell the garlic.
3. Add 1/2 cup of rinsed and drained red lentils, and 1 1/2 cups of rinsed and drained green lentils.
4. Add three cans of tomato sauce and 15 ounces (about one can's worth) of vegetable broth. (Using the tomato can for measuring broth is a convenient trick).
5. Add one can of diced tomatoes with green chilies (fire-roasted recommended for more flavor).
6. Add one 15-ounce can of red kidney beans.
7. Add two tablespoons of chili powder, two teaspoons of Mexican oregano, and one teaspoon of cumin.
8. Add one teaspoon of salt (or to taste).
9. Add two tablespoons of maple syrup (or brown sugar) for sweetness. This is optional but recommended.
10. Give everything a quick stir. Be aware that red lentils absorb more moisture than green lentils, so adjust liquid if using different ratios.
11. Press 'cancel' to turn off the saute function. Put the lid on the Instant Pot and move the valve to 'sealing'.
12. Press the 'bean chili' button and set the timer to 12 minutes. The Instant Pot will take 8-10 minutes to come to pressure before the timer starts counting down.
13. Once cooking is complete, allow for a natural pressure release for 10 minutes. After 10 minutes (or longer), carefully release any remaining pressure using a spoon to avoid steam burns.
14. When the steam stops, carefully open the Instant Pot and remove the lid. You can place the hot lid conveniently on the Instant Pot's handle.
15. Ladle the chili into bowls and serve with your favorite toppings such as cheese, tomatoes, red onions, Greek yogurt (or sour cream), avocados, and fresh cilantro.
