Harissa Chicken with Couscous

Ingredients
1tsp cumin seeds, 0.5tsp coriander seeds, 3ea garlic cloves, 1pinch salt, 1pinch MSG blend, 2tbsp lemon juice, 0.25cup olive oil, 0.33cup harissa paste, 2lb boneless, skinless chicken thighs, 2ea cucumber, 2ea tomatoes, 1bunch parsley, 0.5cup Greek yogurt, 1pinch black pepper, 0.5cup almonds, 1.5cup chicken stock, 0.25cup raisins, 1.5cup couscous, 1ea red onion
Instructions
1. Grind cumin seeds, coriander seeds, garlic cloves, salt, and MSG blend in a mortar and pestle until it forms a paste. Add lemon juice and olive oil, then mix in harissa paste.
2. Add half of the marinade to the chicken thighs and mix well to coat every surface. You can marinate the chicken for an hour or up to a day in the fridge.
3. Heat olive oil in a pan over moderately high heat. Sear the chicken thighs until browned on both sides. Cover the pan with a lid, slightly cracked to allow evaporation, and cook until the chicken is mostly cooked through.
4. Dice cucumbers and tomatoes. Pick parsley leaves and chop them. Thinly slice red onion.
5. For the sauce, combine Greek yogurt, minced garlic, lemon juice, salt, MSG blend, black pepper, and olive oil. Mix well.
6. Roughly chop almonds. Deglaze the pan with chicken stock, scraping up any browned bits from the bottom. Add raisins and stir. Bring the liquid to a simmer.
7. Add couscous to the simmering liquid, stir until evenly layered, then turn off the heat and cover. Let it sit for about 10 minutes until the liquid is absorbed and the couscous is fluffy.
8. Chop the cooked chicken into bite-sized pieces. Add the chopped chicken and any juices from the cutting board back into the pan. Add the remaining marinade and cook until the chicken is coated and piping hot.
9. Add olive oil, pepper, salt, MSG blend, and lemon juice to the salad ingredients. Toss well.
10. Serve the harissa chicken and couscous with the yogurt garlic sauce, extra harissa, and the fresh salad. Garnish with remaining almonds.
