Nasi Goreng

Ingredients
3cloves garlic, 2medium shallots, 0.5tsp shrimp paste, 3tbsp sweet soy sauce (kecap manis), 1tbsp fish sauce, 1tbsp sambal (ground chili and vinegar), 150g shredded chicken (leftover), 2cups cooked rice (cold), 0.25tsp salt, 2stalks green onions, 2tbsp oil, 1large egg, 50g shrimp crackers (krupuk), 50g cucumber and carrot pickles, 2tbsp fried shallots, 0.5medium tomato
Instructions
1. Prepare the herb paste by pounding garlic and thinly sliced shallots in a mortar and pestle. Add shrimp paste and continue to pound into a rough paste.
2. Make the sauce by combining Indonesian sweet soy sauce (kecap manis), fish sauce, and sambal (ground chili and vinegar) in a bowl.
3. Heat a wok with a little oil. Add the herb paste and stir-fry until fragrant.
4. Add shredded chicken (or other protein/vegetables) to the wok and heat through.
5. Add cold cooked rice to the wok. Break it apart and mix well with the herb paste and chicken.
6. Pour in the prepared sauce and add a pinch of salt. Mix thoroughly until the rice is evenly coated.
7. Increase the heat and continue to stir-fry the rice to dry it out and get a slight toastiness.
8. Turn off the heat and stir in chopped green onions.
9. Serve the nasi goreng with a sunny-side up egg, shrimp crackers (krupuk), cucumber and carrot pickles, fried shallots, and fresh tomato slices.
