Poutine Bites

24ea Frozen tater tots, 8tablespoons Unsalted butter, 4tablespoons All-purpose flour, 4cups Beef stock, 2tablespoons Soy sauce, 1tablespoon Worcestershire sauce, 1clamshell Poultry herbs (thyme, sage, rosemary), 1teaspoon Marmite, 1cup Cheese curds, 1bunch Chives
Instructions
1. Thaw frozen tater tots completely until soft. If you don't have a mini muffin tin, cut small squares of parchment paper and aluminum foil, then use a small cup to mold them into mini muffin cups.
2. Break up about two dozen thawed tater tots. Drizzle about four tablespoons of melted butter over them and mix to create a substrate. Press this mixture into your muffin cups to form potato cups with a solid bottom and sidewalls.
3. Bake the potato cups in a 375°F (190°C) oven for 15 to 20 minutes, or until golden brown and completely set.
4. While potato cups bake, melt four tablespoons of unsalted butter in a saucepan. Add four tablespoons of all-purpose flour to make a roux. Cook for 1 to 3 minutes until the raw flour smell dissipates.
5. Slowly stream in four cups of beef stock, one splash at a time, whisking until all liquid is absorbed and the mixture becomes a smooth base. Then add the rest of the liquid.
6. To the gravy, add about two tablespoons of soy sauce, one tablespoon of Worcestershire sauce, and a few sprigs of poultry herbs (thyme, sage, rosemary). Optionally, add one to two teaspoons of Marmite for extra umami.
7. Bring the gravy to a simmer and cook for about 10 minutes until it thickens. Taste for seasoning and set aside.
8. Once potato cups are golden brown, place a single cheese curd into each cup. Return to the oven for 5-10 minutes, or until the cheese is completely melted and slightly browned in spots.
9. Strain the gravy if desired. Thinly slice some chives for garnish.
10. Pour gravy over the melted cheese in each potato cup. Garnish with sliced chives and serve immediately.
