Salt and Pepper Pork Chops

Ingredients
1lb pork loin sirloin chop, 0.2piece red bell pepper, 0.2piece green bell pepper, 1stalk scallion, 2cloves garlic, 0.5piece red chili pepper, 2tbsp cornstarch, 0.5tsp baking soda, 1tbsp cooking wine, 1tbsp oyster sauce, 1tbsp light soy sauce, 2tbsp water, 1tsp sugar, 0.5tsp salt, 2cups corn oil, 0.5piece egg, 1tbsp garlic salt, 0.25tsp white pepper
Instructions
1. Cut the red bell pepper into strips, then rotate and dice. Dice the green bell pepper the same way. Dice one scallion. Peel, smash, and mince two garlic cloves. Mince half of a red chili pepper (or more if you like it spicier).
2. Cut the pork loin sirloin chop to your desired size. Turn the knife sideways to halve the pieces to around 1/4 inch thick. Pound the pork with the back of the knife to tenderize it.
3. For the pork marinade, mix 2 tbsp of cornstarch, a little bit less than a 1/2 tsp of baking soda, 1 tbsp of cooking wine, 1 tbsp of oyster sauce, 1 tbsp of light soy sauce, 1 tbsp of water, 1 tsp of sugar, and a 1/2 tsp of salt in a bowl. Mix well.
4. Add the pork to the marinade and mix by hand for about one minute. Add another tbsp of water if the pork can't plump up. Let the pork marinate for 30-60 minutes.
5. Heat up a pot with about 2 cups of corn oil on high heat. To check if the oil is hot enough, drop a small piece of wet ingredient into the oil. If it crackles immediately, the oil is hot enough. If it's too hot, add 2 more tbsp of room temperature oil to cool it down.
6. While the oil is heating up, add half a beaten egg into the marinated pork and mix it up. This helps the cornstarch soak up and makes the pork crispier when fried.
7. Put 3 tbsp of cornstarch on a large plate. Coat each piece of pork with cornstarch before dropping it into the oil to fry. Fry in batches to not overcrowd the pot. Fry until the outside crust is a light golden brown, about 1.5 minutes. Take out the pork and let the oil drip off.
8. Heat up the oil again. Once the oil is hot (around 450°F), fry all the pork together for a second time for about 30 seconds to get the outside extra crispy. Take out the pork.
9. Heat up a wok on medium heat. Add about a tsp of the used oil. Fry the minced garlic first, then add the red chili pepper, red bell pepper, green bell pepper, and scallions. Stir-fry for about 30 seconds on high heat.
10. Add the fried pork into the wok with the aromatics. Toss for about 30 seconds. Add the garlic salt and white pepper. Continue to mix for another 20-30 seconds until the seasoning is evenly coating the pork. Turn off the heat and plate it.
