Quick and Delicious Pumpkin Donuts

210g All-purpose flour, 0.5tsp Baking powder, 0.25tsp Baking soda, 0.25tsp Salt, 2tsp Pumpkin pie spice, 225g Pumpkin puree, 0.25cup Vegetable oil, 1ea Large egg, 100g Granulated sugar, 0.5cup Brown sugar (light or dark, firmly packed), 2tsp Vanilla extract, 0.5cup Granulated sugar (for topping), 1.5tsp Cinnamon (for topping), 120g Powdered sugar (for glaze), 2tbsp Maple syrup (for glaze), 2tsp Milk or water (for glaze)
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large bowl, sift together 1 ¾ cups (210g) all-purpose flour, ½ teaspoon baking powder, ¼ teaspoon baking soda, ¼ teaspoon salt, and 2 teaspoons pumpkin pie spice. Whisk to combine and set aside.
3. In a smaller bowl, combine 1 cup (225g) pumpkin puree, ¼ cup vegetable oil, 1 large room temperature egg, ½ cup (100g) granulated sugar, ½ cup firmly packed light or dark brown sugar, and 2 teaspoons vanilla extract. Whisk until well combined and smooth.
4. Liberally grease the wells of your donut pans (two 6-donut pans or equivalent) with baking spray or butter.
5. Pour the wet ingredients into the dry ingredients. Mix until just combined, being careful not to overmix, as this can lead to a chewier texture.
6. Transfer the batter to a piping bag (or use a spoon) and fill the donut wells about two-thirds of the way full.
7. Bake for about 12 minutes, or until a skewer inserted into the center comes out clean and the donuts spring back when gently touched. Check at 10 minutes, especially if using shallower pans.
8. While donuts bake, prepare toppings. For cinnamon sugar, combine ½ cup granulated sugar and 1 ½ teaspoons cinnamon (or pumpkin pie spice) in a small bowl. For maple glaze, whisk together 1 cup (120g) powdered sugar, 2 tablespoons maple syrup, and about 2 teaspoons milk or water, adding milk/water gradually until desired consistency is reached. A pinch of salt can be added to the glaze.
9. Once baked, let donuts cool slightly before topping. Roll warm donuts in cinnamon sugar or dip in maple glaze.
