Chickpea Bites Meal Prep

1can canned chickpeas, 1ea egg, 0.5cup breadcrumbs, 0.33cup all-purpose flour, 0.5ea lime juice, 2teaspoons toasted sesame oil, 0.5teaspoon salt, 0.5teaspoon garlic powder, 0.5teaspoon onion powder, 0.5teaspoon ground cumin, 0.25teaspoon cayenne pepper, 0.25teaspoon black pepper, 1ea avocado, 2ea carrots, 100g sugar snap peas, 100g trail mix
Instructions
1. Add one can of rinsed and drained chickpeas, one egg, half a cup of breadcrumbs, a third of a cup of all-purpose flour, the juice of half a lime, two teaspoons of toasted sesame oil, salt, garlic powder, onion powder, ground cumin, and a little bit of cayenne pepper to a food processor.
2. Process the mixture until it forms a ball-like consistency.
3. Take about two tablespoons of the mixture, roll it into a ball, and then roll it in extra panko breadcrumbs for a crispy texture. Flatten it slightly with your hands and place it on a baking sheet lined with parchment paper.
4. Spray the chickpea bites with cooking oil and bake them in the oven at 425°F (220°C) for 20 to 25 minutes. Flip them halfway through baking to ensure they get crispy on both sides.
5. Prepare the avocado dip by mashing one avocado with the juice of half a lime, salt, pepper, onion powder, and garlic powder. Mix everything together.
6. Spoon the avocado dip into small containers. You can find these at most grocery stores or retailers. Alternatively, use silicone cupcake liners.
7. Fill other small containers with trail mix.
8. Assemble the meal prep containers by placing the avocado dip and trail mix containers into the designated compartments. Add carrot sticks and sugar snap peas to the vegetable compartment.
9. Once the chickpea bites are cooled, add them to the meal prep containers.
