Calamari Fritti (Fried Calamari)

500ml sunflower oil, 3pieces calamari, 1.5cups flour, 1.5cups semolina, 3teaspoons parsley, to taste pepper, to taste salt, 2pieces lemon, 0.5cups mayonnaise, 1tablespoon sriracha sauce
Instructions
1. Fill a pan with sunflower oil and heat it to a minimum of 170 degrees celsius to a maximum of 190 degrees celsius.
2. Cut the calamari into rings or strips and clean the tentacles.
3. Mix flour and semolina together in a bowl, then add parsley, pepper, and salt.
4. Marinate the calamari with lemon juice and a little parsley.
5. Coat the calamari in the flour and semolina mixture, then use a strainer to get rid of the excess flour.
6. Make the dipping sauce by mixing mayonnaise, sriracha sauce, parsley, and a little lemon juice.
7. Fry the calamari in the hot sunflower oil for about one minute to one minute and a half until golden and crispy.
8. Plate the calamari, squeeze fresh lemon juice on top, and serve with the homemade sriracha mayonnaise sauce.
