Shaved Fennel Salad

1bulb fennel, 0.25bunch coriander, 1whole lime, 2tbsp grapefruit marinade, 2tbsp olive oil
Instructions
1. Discard the outer layer of the fennel and gently shave off thin strips into iced water.
2. Drain the fennel and combine with chopped coriander, lime zest, and lime juice.
3. Season lightly, dress with leftover grapefruit marinade and a drizzle of olive oil, and toss together.
