2tsp Oil, 1tsp Butter, 1tsp Cumin, 1inch, chopped Ginger, 4cloves, chopped Garlic, 3chopped Chilli, 1finely chopped Onion, 1chopped Tomato, 1chopped Carrot, 2tbsp Sweet Corn, 3tbsp Peas, 0.5sliced Capsicum, 0.5tsp Turmeric, 1tsp Chilli Powder, 2tsp Pav Bhaji Masala, 1tsp Salt, 200grams Paneer, 6cups Leftover Rice, 0.5tsp Pepper Powder, 2tbsp, chopped Coriander, 0.5to_taste Lemon
Instructions
1. First, heat oil and butter in a large kadhai or pan. Add cumin and let it splutter until aromatic.
2. Now add the ginger, garlic, and green chillies, and sauté well.
3. Next, add the onion and cook until softened.
4. Add the tomatoes and cook until soft. Use red tomatoes here as they provide a great flavor and color.
5. Add your choice of vegetables. I used carrots, corn, peas, and bell pepper here. Stir-fry the vegetables just until they remain crunchy.
6. Keep the heat low and add turmeric powder, red chilli powder, pav bhaji masala, and salt. Sauté the spices well so the masala becomes aromatic.
7. Today's secret ingredient is paneer. Grate the paneer using a coarse grater. Paneer is a good source of protein and calcium, making this recipe both filling and nutritious.
8. Add the grated paneer and mix gently. The spiced paneer bhuri is ready.
9. Now add the leftover rice along with the pepper powder and a little salt. Mix everything gently so the rice grains do not break. Do not mash the rice, just coat it with the masala.
10. Once the rice and paneer bhurji are well combined, add the chopped coriander and lemon juice. The lemon juice gives it a fresh and tangy flavor.
11. High-protein, no-egg, no-meat bhurji rice is ready. Perfect for a lunch box and tastes just like street food.
