Neapolitan Panuozzo

300ml Water, 500grams Le 5 Stagioni Farina "00" Flour Classic, 15grams Sea Salt, 2grams Fresh Yeast, 20ml Extra Virgin Olive Oil, 5grams Oregano, 100grams Provolone, 100grams Friarielli, 100grams Sausage, 20grams Parmigiano Reggiano, 100grams Mozzarella, 50grams Cherry Tomatoes, 50grams Arugula, 50grams Prosciutto, 50grams Pancetta
Instructions
1. Add 300ml of water to a bowl. Add 15g of sea salt and mix until dissolved. Slowly add 500g of "00" flour while mixing with your hand. Add 2g of fresh yeast and continue mixing until the dough is smooth. Knead the dough on a wooden board until it's smooth and elastic. Cover the dough with a damp cloth and let it rest for 2 hours.
2. After 2 hours, uncover the dough. Cut the dough into 250g portions. Roll each portion into a ball, making sure the closure is well-closed. Place the dough balls in an airtight container and let them rest at room temperature for 22 hours.
3. Sprinkle flour on a marble surface. Take a dough ball and stretch it gently into a long shape. Drizzle with extra virgin olive oil and sprinkle with oregano. Bake in a wood-fired oven at 430°C (806°F) until it puffs up. Once puffed, remove from the oven.
4. Cut the panuozzo halfway like a sandwich. For the first panuozzo, add provolone, friarielli, sausage, and Parmigiano Reggiano. Drizzle with extra virgin olive oil. For the second panuozzo, add mozzarella, cherry tomatoes, and extra virgin olive oil. For the third panuozzo, add mozzarella and pancetta.
5. Place the panuozzo with provolone, friarielli, and sausage near the opening of the wood-fired oven to melt the cheese and heat the ingredients. For the electric oven, place the panuozzo on a baking tray and bake under the grill for 5 minutes until the cheese is melted and the panuozzo is golden brown.
6. Once the cheese is melted, close the panuozzo and press it gently. Let it cook for a little bit more until it's golden brown. Remove from the oven and serve.
