Instructions
1. Finely chop lemongrass, galangal, and kaffir lime leaves. If desired, add one or two Thai chilies for spice. Pound the lemongrass first into a fine paste, then add the other herbs and pound them together to form a Tom Yum herb paste.
2. Blend canned whole peeled tomatoes (ensure they are unsalted) in a blender or food processor until slightly broken down, not a complete puree.
3. In a pot, add olive oil and chopped garlic. Turn the heat on low and gently infuse the garlic into the olive oil until the smallest pieces turn golden.
4. Add the blended tomatoes to the pot and stir. Then, add Thai chili paste. Season with fish sauce. Let the sauce reduce until it is very thick, about an hour.
5. Once the sauce is thick, add the prepared Tom Yum herb paste. Simmer for another 3-5 minutes to infuse the herb flavors.
6. Turn off the heat and stir in fresh lime juice. This will loosen the sauce to a pizza consistency and add essential tartness. Taste and adjust seasoning with more fish sauce, sugar, or chilies if needed.
7. In a bowl, combine bread flour, salt, and sugar. Whisk to mix thoroughly. Add instant yeast, water, and a touch of olive oil. Stir with your hands to form a rough dough.
8. Cut the dough in half to make two pizzas. Place each half in a bowl with a little oil to prevent sticking.
9. For best flavor, cover the dough and refrigerate overnight for a slow rise. Two hours before baking, remove from the fridge to bring to room temperature. Alternatively, let it rise at room temperature for 1.5-2 hours.
10. Prepare toppings, such as shrimp cut in half horizontally.
