Air Fryer Apple Cider Donuts

600mL apple cider, 1ea large, room temperature egg, 1ea large, room temperature egg white, 50mL granulated sugar, 73g packed, light brown sugar, 53g melted unsalted butter, 1tsp vanilla extract, 360g all-purpose flour, 1.75tsp baking powder, 0.25tsp baking soda, 1tsp ground cinnamon, 0.25tsp cardamom, 0.125tsp freshly ground nutmeg, 0.75tsp salt, 1as needed avocado oil spray, 80g unsalted butter, melted, 133g granulated sugar, 1tbsp ground cinnamon
Instructions
1. Grab 2 and 1/2 cups of apple cider. Place the apple cider in a saucepan over medium-high heat. Bring it to a boil and reduce it to 2/3 of a cup. Set your apple cider reduction aside to cool.
2. In a medium bowl, combine 1 large, room temperature egg, 1 large, room temperature egg white, 2/3 cup of apple cider reduction, 1/4 cup of granulated sugar, 1/3 cup of packed, light brown sugar, 1/4 cup (1/2 stick) of melted unsalted butter, slightly cooled, and 1 tsp of vanilla.
3. Grab a whisk and mix this up so it's nice and smooth.
4. Grab a big bowl and a scale if you're using one. Add 3 cups of all-purpose flour, 1 and 3/4 tsp of baking powder, 1/4 tsp of baking soda, 1 tsp of ground cinnamon, 1/4 tsp of cardamom, 1/8 tsp of freshly ground nutmeg, and 3/4 tsp of salt.
5. Mix it up so it is nice and combined.
6. Fold the wet ingredients together with your spatula just until the flour disappears. Scrape the bowl down, making sure nothing is lurking in the bottom, because you want this dough to be nice and cohesive, not have any cracks or anything like that. Once your dough is nice and together, this dough needs to be chilled out because it is very wet right now. Four hours minimum, up to 12 hours before we shape it and cut it. This is going into the fridge.
7. After your dough is chilled, grab it out of the fridge. Turn this out onto a floured surface. Pat this dough down to about half of an inch thick. You'll want a 3-inch as well as a 1-inch circle cutter. Flour them up and cut. This gets transferred right onto a baking sheet lined with parchment paper. Cut a hole in the middle. You'll air fry the donut holes and the donuts separately because they have different cook times. Reflour your cutter and repeat this. You should have about nine donuts at the end. Reroll your scraps.
8. Preheat your air fryer for 5 minutes. Set to 375°F for a basket, 410°F for a combo unit. If you have a wire mesh basket, add a little bit of parchment paper on the bottom so nothing seeps through. Spray the tops of our donuts with some avocado oil. Now place those upside down onto the parchment paper. Now spray the other side.
9. While the donuts are air frying, melt 6 tablespoons of unsalted butter. Grab a bowl and make your cinnamon sugar. For your cinnamon sugar, you'll want about 2/3 of a cup of granulated sugar and 1 tablespoon of cinnamon. Give that a mix and that'll be ready to go.
10. After six minutes of air frying, flip your donuts over and cook an additional two to three minutes. They should be golden all over. Transfer these to a cooling rack really quickly. Just set them aside, we'll cook them in batches. All my donut holes can cook at once. These guys just bake for six minutes. Give them a spray and then a spray after you toss them. While these bake, we're going to finish off our donuts.
11. Once your donuts have cooled slightly, brush them with butter on both sides, actually all over. I would just do these one at a time and I like to have a spoonful of cinnamon sugar at the ready. The bottom goes right in and the top gets coated. Repeat that process for the rest of your donuts.
