Old-Fashioned Donuts

300g flour, 2tsp baking powder, 0.5tsp baking soda, 0.5tsp salt, 0.25tsp nutmeg, 150g sugar, 100g butter, 1ea egg, 1ea egg yolk, 120ml buttermilk, 1tsp vanilla extract, 1l oil for frying
Instructions
1. Whisk together the flour, baking powder, baking soda, salt, and nutmeg in a medium bowl until evenly distributed. Set aside.
2. Beat the sugar and butter in the bowl of a stand mixer fitted with a paddle attachment on medium speed until just combined and sandy in texture. This should take about 1 minute.
3. Add in the egg and egg yolk and beat until smooth, which should take about 3 minutes. Scrape down the sides of the bowl.
4. Add the buttermilk and vanilla and beat on low speed for about 3 minutes.
5. Add the flour mixture to the sugar mixture in two additions, beating on low speed until no dry streaks remain. This is about 1 minute per addition.
6. Wrap the dough tightly in plastic and refrigerate for at least 2 hours, or overnight for up to 12 hours, until firmed up.
7. Once chilled, unwrap the dough and place it on a well-floured work surface. Dust the top with flour and roll it to about 1/2 inch thick.
8. Using a 3-inch donut cutter, cut out donut shapes. Gently gather and re-roll scraps to make about 12 donuts total.
9. Pour oil into a heavy pot or Dutch oven and heat over medium-high until it reaches 350°F. Adjust heat as necessary to maintain temperature.
10. Working in batches, gently add two or three donuts at a time to the hot oil. Fry for about 60 to 75 seconds until pale golden. Flip and fry the other side for about 1 minute longer until an even light golden color.
11. Transfer fried donuts to a wire rack set over paper towels and let them cool completely, which should take about 20 minutes.
