Ginger Fried Rice

2cups white rice, 0.5half chicken breast, 0.5tsp salt, 1tsp cornstarch, 2tbsp water, 2ounces ginger, 2stalks green onions, 3ea eggs, 0.5tsp salt, 2tbsp oil, 1tsp salt
Instructions
1. Wash and cook 2 cups of white rice. Pour the rice into the pot, submerge it in water, massage and mix with hands, then drain thoroughly. Repeat this washing process 3 times. Add 2 cups of water (a one-to-one ratio) to the pot, erring on the side of less water for fried rice. Start your rice cooker on the "rice" setting. This step takes about 30-45 minutes.
2. Cut half of a chicken breast into thin strips, then slice the strips into thinner pieces, and finally cut them into small bits. Place the cut chicken in a bowl.
3. Marinate the chicken with 1/2 tsp salt, 1 tsp cornstarch, and 2 tbsp water. Mix and massage the chicken with your hands until the marinade is fully absorbed.
4. Cut about 2 ounces of ginger into thin slices. You do not need to peel the skin if it's washed thoroughly, as the skin is nutritious. Place the sliced ginger aside for later.
5. Cut 2 green onions. Place the cut green onions aside for later.
6. Crack three eggs into a bowl. Add 1/2 tsp salt to the eggs for flavor. Mix the eggs thoroughly with chopsticks.
7. Once the rice is about 4-5 minutes away from being ready, set the stove to its highest heat. Once the wok is hot, add 1-2 tbsp oil and swirl to coat the wok. Slowly pour in the beaten egg and constantly stir it with a chopstick for about 45-60 seconds. The egg should be a soft consistency. Place the cooked egg aside in a bowl.
8. Heat the pan again and add another 1-2 tbsp oil. Add the marinated chicken and cook for about 60 seconds.
9. Add the sliced ginger to the wok with the chicken and stir-fry for about one minute. The combination of ginger and chicken creates a special fragrance and flavor.
10. Add the cooked rice to the wok. Spread the rice out and separate any clumps. Cook for about 60 seconds.
11. Add 1 tsp of salt to the rice and stir it around the wok to mix it in.
12. Add the cooked egg back into the wok with the rice. Gently stir the eggs around the wok for about 2 minutes, spreading them apart and mixing them with the rice to maintain their softness.
13. Add the green onions to the wok and mix them into the fried rice for about a minute. This adds beauty and flavor to the dish.
