600g Chuck steak, 200g Short ribs
Instructions
1. Start with cuts of meat: chuck steak and short ribs. Aim for a ratio of about 75% chuck to 25% short rib.
2. Slice out the main muscle groups from the meat, leaving behind as much tough sinewy bits as possible. Ensure the meat is well-marbled with intramuscular fat.
3. To grind the meat, you can use a meat grinder, a stand mixer attachment, or a food processor. If using a food processor, chop the meat, spread it on a sheet tray, and freeze for about 10 minutes until the edges are starting to freeze but it's still pliable. Then pulse in batches (about half a pound at a time) until ground.
4. If chopping by hand, use a heavy knife like a Chinese cleaver. Chop the meat, ensuring it doesn't get too warm. If it starts to smear or cling to the knife, spread it on a sheet tray and chill in the freezer for about 5 minutes.
5. Continue chopping or grinding until the meat is evenly ground. Form into quarter-pound patties.
