Healthy Vegetable Rice Bowl

Ingredients
2cups short grain rice, 1.5cups water, 2.5ounces kale, 8ounces Korean radish (daikon), 2large king oyster mushrooms, 8ounces soybean sprouts (kongnamul), 0.25cup soy sauce (Jin-ganjang), 2teaspoons Korean hot pepper flakes (gochugaru), 1teaspoon zero calorie sweetener (or sugar), 1clove garlic, 3stalks green onions, 1tablespoon sesame oil, 1teaspoon sesame seeds, 1ea egg, 1tablespoon hot pepper paste (gochujang)
Instructions
1. Measure 2 cups of short grain rice into a pot.
2. Wash the rice by scrubbing and rinsing 3 times until the water is clear. Drain as much water as possible.
3. Add 1.5 cups of water to the washed rice in the pot and flatten the rice. Soak the rice for at least 30 minutes.
4. Prepare the kale by removing hard stems. You will need about 2-3 ounces.
5. Wash the king oyster mushrooms quickly to prevent them from absorbing too much water. Remove the root ends and slice them.
6. Wash the Korean radish and cut about 8 ounces into matchsticks.
7. Wash about 8 ounces of soybean sprouts, discarding any spoiled beans.
8. While the rice is soaking, prepare the seasoning sauce (yangnyeom-jang). Combine 1/4 cup soy sauce, 2 teaspoons Korean hot pepper flakes, 1 teaspoon zero calorie sweetener (or sugar), 1 minced garlic clove, 3 chopped green onions, 1 tablespoon sesame oil, and sesame seeds in a bowl. Mix well.
9. After the rice has soaked for 30 minutes, add the prepared kale, radish, mushrooms, and soybean sprouts on top of the rice in the pot.
10. Cook the rice and vegetables on high heat for 7 minutes.
11. After 7 minutes, add 1/4 cup of water around the edge of the pot. Reduce the heat to low and cook for another 7 minutes.
12. Turn off the heat and let it rest for a few minutes.
13. Serve the vegetable rice bowl with a fried egg (optional), a drizzle of sesame oil, the prepared seasoning sauce (yangnyeom-jang), and a dollop of hot pepper paste (gochujang) if desired. Mix everything together before eating.
