Millionaire's Shortbread

200g All-purpose flour, 1tsp Salt, 100g Granulated sugar, 226g Butter, 397g Sweetened condensed milk, 60ml Lyle's Golden Syrup, 5ml Vanilla extract, 200g Semisweet chocolate
Instructions
1. Combine all-purpose flour, salt, granulated sugar, and butter in a stand mixer. Mix until the flour is evenly moistened and the mixture is crumbly, not a cookie dough consistency.
2. Spread the crumbly shortbread mixture evenly into a prepared baking pan and press it down firmly.
3. Bake the shortbread at 325°F (160°C) for about 30 minutes, or until golden brown and set but still tender.
4. Let the shortbread cool completely before adding the caramel layer.
5. In a saucepan, combine sweetened condensed milk, Lyle's Golden Syrup, butter, and salt. Cook over medium heat, stirring constantly, until the mixture reaches 220-225°F (104-107°C) on a candy thermometer and thickens to a butterscotch pudding consistency.
6. Remove the caramel from heat and stir in the vanilla extract.
7. Pour the hot caramel over the cooled shortbread, spreading it evenly before it sets in the pot.
8. Let the caramel layer cool completely.
9. Melt the chopped semisweet chocolate in a microwave using short bursts and stirring in between, or use a double boiler. Ensure the water in the double boiler does not touch the bottom of the bowl to prevent scorching.
10. Pour the melted chocolate over the cooled caramel layer and spread it evenly.
11. Let the chocolate set completely. Once set, carefully remove the shortbread from the pan by loosening the edges.
12. Cut the millionaire's shortbread into 32 bars (8x4 pieces).
