Instructions
1. Gordon Ramsay arrives at The Walnut Tree Inn, which is in trouble. The head chef has quit, the kitchen is a mess, customers are leaving, and the owner, Francesco Mattioli, is broke and has had to sell his house. Gordon has one week to turn things around.
2. Gordon observes Francesco trying to manage the kitchen and serve customers, noting that Francesco is not a trained chef and shouldn't be in the kitchen. He believes Francesco should be charming customers in the dining room.
3. Gordon tastes the Porcini and Parma ham lasagna, a former favorite, and finds it very boring. He emphasizes the need for evolution and excitement in the menu, especially with high prices.
4. Gordon tastes the fish stew and finds the mussels are not cleaned, resulting in grit and sand. He expresses his extreme dissatisfaction, stating that such a dish would make him 'go fucking bizarre' in his own restaurant.
5. Gordon confronts Francesco about the poor quality of the food, especially the fish stew, which he describes as 'a bowl of clay seasoned with sand.' He tells Francesco he needs to get out of the kitchen.
6. Gordon and Francesco interview a potential head chef, Spencer, who prepares a dish. Gordon finds the dish 'plain Jane, boring' and not worth the requested salary. He emphasizes the need for a chef who can bring excitement and innovation.
7. Gordon and Francesco interview another potential head chef, Santo, who admits to knowing nothing about The Walnut Tree Inn's history or reputation. Gordon is unimpressed, especially when Santo reveals his current menu relies heavily on microwave cooking.
8. Gordon bans Francesco from the kitchen, stating that he needs to focus on front-of-house duties. He tapes a line on the floor, marking the boundary Francesco cannot cross.
9. Gordon puts Stefano in charge of the kitchen for lunch service. However, the food is late and cold, and Stefano struggles to manage. Gordon expresses his disappointment, highlighting the lack of teamwork and Stefano's inability to command the brigade.
10. Gordon challenges Gary and Stefano to cook three dishes each, which he will taste. He wants to see their individual talent and creativity.
11. Stefano prepares duck and chestnut ravioli, which Gordon finds imaginative. Gary prepares fillet steak and sea bass, both presented well. Gordon is impressed with both chefs' dishes.
12. Gordon tells Francesco that Stefano should stay as Spencer's number two, and Gary should leave. He believes Stefano has the potential to be a great chef and will thrive under Spencer's leadership.
