500g flour, 5g ground cinnamon, 5g ground ginger, 5g freshly ground cardamom, 3g salt, 5g baking powder, 200g room temperature butter, 150g sugar, 2oranges orange zest, 5ml vanilla extract, 1000g confectioner's sugar, 50g meringue powder, 200ml water, 10ml gel food coloring
Instructions
1. Combine flour, ground cinnamon, ground ginger, freshly ground cardamom, salt, and baking powder in a bowl.
2. In a mixer, cream together room temperature butter, sugar, and orange zest until creamy. Add vanilla extract.
3. Gradually add the flour mixture to the butter mixture and mix until just combined.
4. Roll the dough out between two pieces of parchment paper to an even 1/4 inch thickness. Chill the dough in the fridge or freezer until very cold.
5. Combine confectioner's sugar and meringue powder in a bowl. Gradually add water, mixing by hand until the royal icing reaches a pourable consistency that falls back into itself in about 10 seconds.
6. Divide the royal icing into separate bowls and color each with gel food coloring. Cover and let rest for at least 30 minutes to allow bubbles to dissipate.
7. Preheat oven to 175°C (350°F).
8. Remove the chilled dough and cut into 1 inch by 2.5 inch rectangles. Place cookies on a baking sheet.
9. Bake cookies for 10-12 minutes, or until lightly golden at the edges. Let cool completely.
10. Arrange cooled cookies close together on a wire rack over parchment paper. Combine desired colored icings in a bowl, swirling them gently. Pour the mixed glaze over the cookies.
11. Allow the royal icing to fully dry for about 6 hours.
