Salt & Pepper Chicken Wings

1000g chicken wings, 0.5tsp salt, 1tsp sugar, 0.5tsp white pepper powder, 1tbsp light soy sauce, 1tbsp oyster sauce, 0.5tsp dark soy sauce, 1tbsp cooking wine, 50g green onions, 50g shallots, 30g garlic, 20g red chilis, 100g sweet peppers, 1tsp garlic salt, 3.5tbsp cornstarch, 3tbsp flour
Instructions
1. Wash the chicken wings with clean water and squeeze out the myoglobin. Pat them dry with paper towels.
2. Prepare the chicken wings: make two cuts across the back of the flat and pierce drumettes twice with a small knife into the thickest part of the meat. Do this on a cutting board for safety.
3. In a large bowl, combine 1/2 tsp salt, 1 tsp sugar, 1/2 tsp white pepper powder, 1 tbsp light soy sauce, 1 tbsp oyster sauce, 1/2 tsp dark soy sauce, and 1 tbsp cooking wine. Mix well.
4. Add the prepared chicken wings to the marinade. Mix and massage them with your hands, squeezing the chicken to ensure the marinade seeps into the meat.
5. Chop green onions, slice shallots, mince garlic, cut red chilis into small pieces, and dice sweet peppers into small pieces.
6. Prepare the dry seasoning: combine 1 tsp garlic salt, scant 1/2 tsp salt, and 1/2 tsp white pepper. Mix well.
7. In a separate bowl, mix 3.5 tbsp cornstarch and 3 tbsp flour until well incorporated.
8. Coat each marinated chicken wing in the cornstarch and flour mixture. Use one hand (wet hand) to coat and the other hand (dry hand) to squeeze the chicken firmly to make the coating stick.
