8ea Jalapeños, 100g Cream cheese, 200g Smoked brisket, 50g Shredded cheese, 30g Brisket fat, 200g Bacon, 30g Brown sugar, 2g Cayenne, 2g Black pepper, 50ml Barbecue sauce, 30ml Hot honey
Instructions
1. Halve and clean out the jalapeños, removing seeds but keeping membranes if you like heat.
2. Mix cream cheese, smoked brisket, shredded cheese, and brisket fat until rich and creamy for the filling.
3. Stuff each jalapeño generously with the brisket mixture.
4. Candy the bacon by mixing it with brown sugar, cayenne, and black pepper.
5. Wrap each stuffed jalapeño snugly with the candied bacon and place on a rack for even cooking.
6. Bake in the oven until the bacon caramelizes and everything smells delicious.
7. Prepare the glaze by mixing barbecue sauce and hot honey.
8. Brush the glaze onto the cooked Texas Twinkies at the end to make them glossy and sticky.
9. Let them sit for a minute before serving.
