Spicy Cold Kimchi Noodles

180g somen noodles, 0.5cup aged Kimchi, 0.33medium (85g, 3 ounces) chilled Lebanese cucumber, 1ea hard boiled egg, 2Tbsp gochujang, 1Tbsp rice vinegar, 1Tbsp honey, 1Tbsp raw sugar, 1Tbsp sesame oil, 1Tbsp roasted sesame seeds
Instructions
1. Cut 1/3 chilled Lebanese cucumber into thin strips.
2. Mix 2 Tbsp gochujang, 1 Tbsp rice vinegar, 1 Tbsp honey, 1 Tbsp raw sugar, 1 Tbsp sesame oil, and 1 Tbsp roasted sesame seeds in a bowl to make the bibim sauce.
3. Chop 1/2 cup aged kimchi into bite-sized pieces.
4. Boil 180g (6.3 ounces) somen noodles until cooked.
5. Cool down the noodles under running water for about 1 minute.
6. Add the cooled noodles, chopped kimchi, and bibim sauce to a bowl. Mix well with a gloved hand.
7. Serve the noodles in a bowl, garnished with cucumber strips and half a hard-boiled egg.
