How to Give Old Bread a Second Life

Instructions
1. For slightly firm bread, cut into cubes, toast lightly in the oven or toaster, then sprinkle with water to soften for salads like Panzanella.
2. For bruschetta, toast the bread, rub with garlic, and top with fresh tomatoes or other desired toppings.
3. To make Abruzzo style pecorino balls or meatballs, soften stale bread in water or milk, then mix with eggs, pecorino (or Parmigiano), and meat.
4. For very hard bread, tear it into pieces and add directly to hearty Italian soups and stews (like Ribollita or Pappa al Pomodoro) to thicken them.
5. For extremely hard, rock-like bread, use a grater or food processor to make homemade breadcrumbs.
6. Store homemade breadcrumbs in airtight jars or plastic bags. If toasted, store in the fridge; if not, they can be kept in the pantry.
