Scrambled Eggs Basics

5ea Eggs, 0.25tsp Salt, 1tbsp Milk, 1tbsp Butter, 1tbsp Chili Crisp, 1tbsp Pesto, 1tsp Everything Bagel Seasoning, 1tsp Furikake, 1tbsp Harissa
Instructions
1. Crack 5 eggs into a bowl. Add 1/8 to 1/4 teaspoon of salt and 1 tablespoon of milk (or non-dairy milk, half-and-half, heavy cream, or water).
2. Beat the eggs with a fork until the thick portions of the white and yolk are broken up and mixed together.
3. Place an 8-inch nonstick skillet on the stove. Add 1 tablespoon of butter to the pan and set the heat to medium.
4. Swirl the pan to cover the bottom with melted butter. Wait for tiny bits of bubbling to appear evenly across the entire skillet, indicating it's hot enough.
5. Increase the heat to medium-high. Pour the beaten eggs into the skillet. Stir constantly with a rubber spatula, moving the cooked egg from the bottom to the top.
6. Once you can draw the spatula through the eggs and no runny egg is visible, turn off the heat. Break up any remaining clumps of egg.
7. Cover the skillet with a lid and let it sit for about 1.5 minutes to allow the eggs to finish cooking through residual heat.
8. Serve the scrambled eggs and garnish with your preferred toppings, such as chili crisp, pesto, everything bagel seasoning, furikake, or harissa.
