Instructions
1. Place five slices of bacon in a 12-inch skillet over medium heat. Observe how the bacon buckles as the meaty bits contract more than the fatty bits.
2. Flip the bacon pieces occasionally to ensure even cooking. Note the sizzling sound and the size of the bubbles. Larger bubbles indicate more water is leaving the bacon.
3. Remove the bacon from the skillet when it reaches your desired crispiness. The sizzling sound should diminish significantly, indicating crispiness.
4. To cook bacon more evenly and prevent buckling, add 1/4 cup of water to the skillet with the bacon. This will gently heat the bacon and prevent premature browning.
5. For a full package of bacon, add 1 cup of water to the skillet. Arrange the bacon in two layers, with the second layer perpendicular to the first. The water will prevent the slices from sticking together.
6. Bring the water to a simmer and cook for 15-20 minutes until the water evaporates. Once the water is gone, stir the bacon to ensure even browning and crisping. Remove bacon as it cooks to your desired doneness, arranging it flat on paper towels to drain.
7. For a hands-off method, cook bacon in the oven. Lay out a pound of bacon on a sheet pan, ensuring pieces touch but do not overlap. Bake in a 400°F oven for 12-15 minutes, flipping after 5 minutes.
