Egg Katsu Curry

1ea egg, 50g panko breadcrumbs, 100ml cooking oil, 0.5ea onion, 1ea potato, 0.5ea carrot, 1pack Japanese curry paste, 400ml water, 1bowl rice
Instructions
1. Place parchment paper in a bowl, add panko breadcrumbs, crack an egg into the center, and top with more breadcrumbs.
2. Carefully slide the egg and breadcrumb mixture using the parchment paper into hot oil and fry until golden brown.
3. Remove the fried egg katsu from oil and drain on paper towels.
4. Heat oil in a pot, add chopped onions, potatoes, and carrots, and sauté well.
5. Add curry paste and water to the pot, bring to a simmer, and cook until vegetables are tender.
6. Serve cooked rice and curry on a plate, and top with the crispy egg katsu.
