Salt-Massaged Cabbage with Garlic Sesame Dressing

340g green cabbage, 2teaspoons kosher salt, 1clove garlic, 1.5teaspoons sesame oil, 1pinch sugar, 1sprinkle toasted sesame seeds, 1sprinkle chives
Instructions
1. Prep the cabbage by pulling off any wilted outer leaves. Cut the cabbage in half, then chop it into approximately three-quarter inch pieces. Aim for 12 ounces (about 340g) of prepped cabbage for four servings.
2. Heavily salt the cabbage using about half a teaspoon of kosher salt per three ounces of prepped vegetables. For 12 ounces of cabbage, use two teaspoons of kosher salt. Toss the cabbage, squeezing it to bruise and physically tenderize it. Continue until the cabbage looks bruised and enough moisture has exuded to dissolve the salt.
3. Let the salted cabbage sit for 15 minutes to allow the salt to draw water out and concentrate its flavor.
4. After 15 minutes, cover the cabbage with water and swirl it two or three times to remove excess salt. Drain the cabbage.
5. Prepare the dressing: mince one clove of garlic, add one to two teaspoons of sesame oil, and a pinch of sugar to the cabbage. Toss to combine.
6. Optionally, add a sprinkle of toasted sesame seeds and/or some chives for extra flavor and garnish.
