Crab Fried Rice

Ingredients
1.5cup Cooked white rice (jasmine rice recommended), 3cloves Garlic, 1stalk Green onion, 2tsp Soy sauce (Thai soy sauce recommended), 1tsp Fish sauce, 3ounces Dungeness crab meat (fresh, frozen, or canned), 1ea Egg, 1pinch White pepper, 0.5tsp Sugar, 2tbsp Vegetable oil, 1ea Lime, 0.5ea Cucumber, 1pinch Chili powder, 1tbsp Prik nam pla (Thai chili condiment)
Instructions
1. Heat a couple tablespoons of vegetable oil in a non-stick pan or wok over medium-high heat.
2. Add the chopped garlic to the hot oil. If using raw protein, add it once the garlic starts to turn slightly brown and cook to 60% doneness.
3. Once the smallest bit of garlic has turned brown, crack in the egg. Break the yolk and let it set for a little bit before gently scrambling it to maintain pieces.
4. Add the cold cooked rice and crab meat to the pan. Break down any clumps of rice and toss everything together.
5. Add the soy sauce, fish sauce, sugar, and a couple dashes of white pepper. Continue to cook, stirring constantly, until all the rice is heated through and the sauce is thoroughly distributed.
6. Stir in the chopped green onion. If desired, you can also add cilantro at this stage.
7. Serve the crab fried rice with a lime wedge, cucumber slices, chili powder, and prik nam pla on the side.
