Instructions
1. Prepare the Spanish mackerel fillets. Ensure they are boneless and skinless, around 2.5 inches in size.
2. Make the sauce by combining 1 teaspoon of soy sauce, 2 tablespoons of medium hot pepper flakes, 1 minced garlic clove, about 0.5 teaspoon of ginger, and a pinch of ground black pepper. Mix well.
3. Add the fish to the sauce and mix together, ensuring the fish is well marinated. Turn the fish over to coat both sides.
4. Lightly coat the marinated fish with all-purpose flour.
5. Heat a pan and add about 0.25 cup of cooking oil. Pan-fry the fish for a couple of minutes until the bottom side is golden brown and crunchy.
6. Flip the fish and cook for another two or three minutes until both sides are crunchy and golden brown.
7. Discard the excess oil from the pan.
8. Add the leftover marinade sauce to the pan. Add some rice syrup (or sugar) to the sauce for sweetness and shine.
9. Turn up the heat and let the sauce bubble, then coat the fish with the bubbly sauce.
10. Turn off the heat and drizzle 1 teaspoon of sesame oil over the fish.
11. Garnish with chopped green onion and sesame seeds.
12. Serve with rice, spinach, cabbage pickle, and an egg for a complete lunchbox.
