Lemon Tahini Chicken

1bunch Broccolini, 2pieces Chicken breast, 1pinch Salt, 1pinch Pepper, 2tbsp Olive oil, 1jar Roasted red peppers (jarred), 1handful Basil, 2cloves Garlic cloves, 1can Cannellini beans (canned), 1pack Super grains, 2tbsp Tahini, 1half Lemon, 1splash Water, 5pieces Olives
Instructions
1. Preheat a stainless steel pan on medium-high heat. Perform the water bead test: if water bounces and sizzles, the pan is ready for searing.
2. Prepare the broccolini by taking the tip of a knife and running it down the stalk to help with heat penetration. Place the broccolini in the hot pan to char and steam without oil.
3. While the broccolini cooks, prepare the chicken breasts. Score the thicker side of each chicken breast about a centimeter deep to even out the cooking time. Season with salt, pepper, and a little olive oil, rubbing the seasoning into the cuts.
4. Turn the broccolini over in the pan to ensure even charring. Once cooked, remove the broccolini from the pan and dress it with a little salt, pepper, and a drizzle of olive oil and lemon juice. Toss gently.
5. Add some olive oil to the pan and place the scored chicken breasts, scored side down, into the hot pan. Cook for about 5-6 minutes until golden brown.
6. While the chicken cooks, prepare the pepper sauce. In a blender, add a jar of roasted red peppers and a handful of basil (saving delicate leaves for garnish). Add two garlic cloves and liquidize until smooth.
7. Remove the cooked chicken from the pan. Pour the blended pepper sauce into the pan, scraping up all the golden bits from the bottom of the pan (this adds flavor).
8. Drain a can of cannellini beans and add them to the pepper sauce in the pan. Add a pack of super grains and break them up, mixing them into the sauce. Let it simmer.
9. Prepare the tahini lemon sauce. In a bowl, combine two tablespoons of tahini, a squeeze of lemon juice, a pinch of salt, and a little swig of water. Mix until it thickens into a smooth sauce.
10. Plate the dish: spoon the bean and grain mixture onto plates. Top with the broccolini. Slice the rested chicken breast and place it on top of the broccolini.
11. Pour any resting juices from the chicken over the dish. Drizzle the tahini lemon sauce over the chicken and broccolini. Garnish with torn olives and the reserved delicate basil leaves. Add a lemon wedge for extra freshness.
